Mexican pinto beans 1 cup dried pinto beans 3 cups chicken broth 3 bacon slices, diced 1 small onion chopped 1 small green pepper chopped 2 tea ground cumin 2 tea chili powder 3/4 tea salt 1/2 tea pepper Sort & wash beans, place in lg saucepan. Cover with water 2" above beans, & bring to a boil. Boil beans 1 minute. Cover, remove from heat & let soak for 1 hour. Drain. Bring beans broth & remaining ingredients to a boil. Cover, reduce heat, & simmer 2 hours. Chill if desired; reheat over medium heat. Yield: 4 cups. Prep: 15 min, soak 1 hour, cook 2 hours
