Grilled veggies. In a gallon zip lock bag fill with chunks of onion, peppers, carrots, et al, toss with olive oil and herbs of your choice (fresh if available) and put on the grill in a metal basket for about 25-30 minutes until al dente. If you like asparagus and whole mushrooms add them about mid way through cooking. Every 5 minutes or so just mix them up with a spatula.
